
Shred your poatos and cook in oil, add vidalia onions and garlic that has been pre-sauted in oil or Earth Balance. Make a nice pancake out of this for the bottom. I then sauteed more onions, garlic, mushrooms and spinach and cilantro. Added Organic egg whites with some turmeric for color and placed that on the top of potato pancake. To finish I added some Maldon salt, halved grape tomatoes and some fresh avocado. I like a slice of Ezekial on the side with some Earth Balance and tomato rub and coffee!!
